These bars taste like chocolate cookies and are ideal for those with an active lifestyle. Vegan , healthy and don't need to be baked.
Ingredients (for 6 bars):
1/3 cup (90g) of natural cashew butter or soaked raw cashews;
12 (90g) pitted dates (see note*);
2 tablespoons (20g) of rice protein or other vegetable protein;
2 tablespoons (30g) melted coconut oil;
1 tablespoon (15g) agave syrup, date syrup or honey;
2 tablespoons (15g) grated coconut;
2 tablespoons (20g) of hemp seeds;
1/3 cup (40g) of chocolate bar, broken into pieces (75% cocoa minimum).
Preparation method:
Place all ingredients (except the chocolate) in a high-power blender or food processor and mix until a creamy texture is obtained;
Pour the mixture into a rectangular shape (I used a 24 cm one) lined with cling film, spread it well, place the chopped chocolate on top and let it rest in the fridge for at least 1 hour;
Then, cut into strips and bars and keep in the fridge until serving.
Note: to make it easier to grind the dates, you can soak them for a few hours or boil them for around 5 minutes.
