Treat Your Mom to Breakfast in Bed

One of the most important things to do on Mother's Day is to treat your mother with the kindness and courtesy she deserves. Of all the gifts you want to buy, the gift of your time and consideration will (always) be the best. So, how about preparing breakfast for the woman who has done everything for you her entire life? To start the day off right, the only thing that will be better than delighting her with tasty brunch dishes is the luxury of making her enjoy them in bed. Make your mother feel like the queen she is!

These recipes cover any type of breakfast and also work if you prefer to plan a special snack to mark the date. Whatever your choice, we leave you with a promise: these recipes will make your mother happy.

Banana Flapjacks

Ingredients:

2 spoons of flour;

1/2 spoon of finely chopped toasted walnuts;

3 tablespoons of brown sugar;

1/2 teaspoon of baking powder;

1 teaspoon of baking soda;

1 sliced ​​ripe banana;

2 eggs;

Salt qb;

100g unsalted butter.

Preparation method:

Mix the flour, nuts, sugar, baking powder, salt and baking soda in a bowl;

Mix the banana, eggs and butter in a separate bowl;

Add the flour mixture to the banana mixture and stir until smooth;

Heat a non-stick frying pan over medium heat;

Pour about 1/4 cup of batter for each pancake into the skillet;

Let it stay for 2 or 3 minutes. Keep turning until the flapjacks are cooked.

Serve with toasted walnuts.

Crepes with chocolate and hazelnut

Ingredients (for 20 crepes):

3 eggs;

1/2 rice milk;

3 tablespoons of melted butter;

1 pinch of salt;

1/4 wheat flour;

1 hazelnut chocolate bar, for filling.

Preparation method:

First, make the crepes: in a large bowl, beat all the ingredients (except the chocolate) with a metal whisk or a fork until smooth;

Cover the bowl and leave it in the refrigerator to rest overnight, or for up to two days before cooking;

When you are ready to cook the crepes, place a non-stick frying pan over medium heat and melt a small portion of butter in the pan;

Pour 1/3 of the dough into the pan and shake it in a circle until the bottom of the pan is covered;

Cook the crepe until the surface is dry and then repeat the process until the dough is used up;

Spread the crepes, fill with hazelnut chocolate and fold.

Oat and banana cookies

Ingredients:

3 crushed bananas;

1/3 of a glass of coconut oil;

2 glasses of oat flakes;

1/2 cup of dark chocolate chips or dried fruits (e.g. nuts);

1 teaspoon of vanilla essence.

Preparation method:

Mix all the ingredients very well in a bowl;

Line an oven-proof tray with parchment paper;

Using a spoon, make balls with the mixture and place them all over the tray;

Place in the oven at 180º C and let the cookies bake for 15-20 minutes;

Leave to cool and then store in an airtight jar.
