Energy Balls to Start the Week Right
And how about a supersonic energy boost ? These energy truffles are the ideal snack to kill that bug that invades us between meals. And for those who are in a hurry in the morning, there's nothing like taking a few to enjoy on the go. If you make a lot, you can freeze them.
Ingredients (for 13 small truffles):
1 cup of oats;
1/2 cup of ground linseed;
1/2 cup of sliced almonds;
2 tablespoons of sunflower seeds;
2 spoons full of honey;
1 spoon of peanut butter.
Possible toppings :
Grated coconut to taste;
Goji berries;
Chocolate powder.
Preparation method:
Start by melting the honey and peanut butter in the microwave for 30 seconds. Remove and mix until you obtain a homogeneous mixture;
Place the remaining ingredients in a food processor and grind everything. Add the honey and peanut butter mixture, mix everything again in the processor until it sticks (if it doesn't stick, add more honey) and you get a paste. Place in the fridge for 30 minutes;
Remove the mold paste into balls of the size you want. Bread the balls in your favorite topping and serve.
