This is a great recipe to make on the weekend, when we wake up later and have time to eat and be comfortable until lunchtime.
Caramelized bananas are... forget it. We will not describe it. The best thing is to try it through these pancakes.
Ingredients (6 pancakes):
200g of oat flour;
1 large egg;
1 teaspoon of yeast;
1 scoop of vanilla whey (protein) (optional);
150ml of water;
1 large banana.
Preparation method:
Mix the flour, whey and yeast;
Add the egg and mix;
Add the water and mix well until a homogeneous, semi-thick dough forms;
Heat a non-stick frying pan well and add portions of dough to your liking;
When dots start to appear on the top of each pancake, add banana slices and flip the pancake until the banana caramelizes. Serve plain, with honey, yogurt, jam or whatever you like.
Note: You can freeze it and then heat it in the microwave, or take it in a bag wherever you go. Pancakes taste good at any time of the day, to satisfy your cravings.
