We bring you a vegan recipe, which can be prepared in half an hour: spaghetti Bolognese. It is delicious and does not contain any ingredients of animal origin.
Ingredients:
200g of tofu (you can use seitan if you prefer);
1 onion;
2 garlic cloves;
100g carrots (optional);
100g parsley (optional);
2 tablespoons of olive oil;
200g of tomato pulp;
200g tomato cut into pieces;
2 teaspoons of spice mix ;
Salt and pepper to taste;
1 teaspoon of cane sugar;
1 vegetable broth;
250g of spaghetti;
Fresh basil.
Preparation method:
First, cook the spaghetti with a pinch of salt. When cooked, drain it and set aside;
Chop the onion, garlic cloves and parsley. Reserve;
Drain the tofu (you can drain it better with a kitchen towel) and cut it into pieces;
Heat the oil in a non-stick pan. When the oil is hot, add the tofu and let it cook for a few minutes;
Add the onion, carrots and parsley and cook until the onion turns brown;
Sauté the garlic for a few seconds;
Add the tomato pulp and tomato cut into pieces;
Season the sauce with salt, pepper, the spice mix and sugar and let it boil for 15 minutes, over low heat, until the sauce gains consistency. Add the vegetable broth;
To this preparation add the spaghetti that you started cooking and mix. It's ready to serve.
