Vegetables soup
There are few things like a cleaner meal full of micronutrients to make up for your mistakes. So, here is a recipe for a very nutritious and colorful soup.
Ingredients:
1 small onion;
½ head of large red cabbage (or 1 small whole);
1 medium sweet potato;
1 medium courgette;
2 tablespoons of olive oil;
2 teaspoons of salt;
Coriander to taste;
1.2 liters of boiling water.
Preparation method:
Cut the vegetables into pieces;
In a pan, start by sautéing the onion in olive oil and, as soon as it becomes translucent, add the remaining ingredients, with the exception of the coriander;
Bring to a boil and cook for about 20 minutes, with the lid ajar;
Add the coriander and cook for another 5 minutes or until all the vegetables have softened;
Remove from the heat, pass through a magic wand (*) and it is ready to serve.
Note: If you want a more liquid texture, add more boiling water when grinding the vegetables with the blender.
