Pumpkin Cookies
If you like pumpkin, or if you were offered one and don't know what to do with it, this is the ideal recipe to keep with you in your wallet, super practical.
For a healthier version, we advise you not to do the last, sinful step.
Ingredients (for 10 cookies):
7 tablespoons of wholemeal flour;
3 level tablespoons of brown sugar;
2 level tablespoons of ground golden flaxseed;
150g roasted pumpkin;
1 large egg;
2 tablespoons of grated coconut;
1/2 glass of almond milk;
1 tablespoon of coconut oil;
White chocolate to taste.
Preparation method:
First, mix the flour, sugar, grated coconut and linseed. Add almond milk, coconut oil and egg. Mix and add the roasted pumpkin; Mix everything until you obtain a homogeneous paste;
Preheat the oven to 180 degrees;
Line the oven tray with parchment paper and add a spoonful of dough at a time, so that the cookies are separated from each other. Flatten the dough slightly with the underside of the spoon;
Cook until the biscuits are golden brown (approximately 20 minutes, depending on the oven), and keep an eye on them;
Remove the tray and add the laminated white chocolate while the cookies are hot;
Leave to cool completely. Store in an airtight jar for up to 7 days.
