Sugar-free, gluten-free, moist, melt-in-your-mouth brownies ? Yes! This version combines sweet potato with cocoa powder and results in a wonderful combination that is slightly different from typical chocolate brownies . Gonna love it!
Ingredients:
3 eggs;
1 cup (260g) crushed boiled/roasted sweet potato;
1/2 cup (120g) apple puree (cooked apples);
3 tablespoons (40g) agave/date/maple syrup or honey;
4 tablespoons (50g) melted coconut oil;
4 tablespoons (30g) raw/skimmed cocoa powder;
3 tablespoons (20g) coconut flour;
1/2 teaspoon of baking powder;
1 teaspoon of lucuma powder (optional).
Preparation method:
In a medium bowl, beat the eggs and then add the remaining liquid ingredients, mixing again;
Add the dry ingredients, and the yeast should be introduced together with the flour last;
Wrap well and pour the mixture into a square or rectangular pan previously lined with parchment paper or simply greased;
Place in a preheated oven at 180°C for 30-35 minutes.
