An omelet doesn't necessarily have to be the dish we only make when we have nothing else to cook, or when we're out of imagination. After this recipe you will understand that.
Ingredients (for 2 people): 1 tablespoon of coconut oil or olive oil; 4 organic eggs; 2 medium tomatoes; 1 small onion; 1 clove of garlic; 1/2 red pepper; A pinch of cumin (the secret to this recipe); A pinch of fresh black pepper; Coriander to taste. Preparation method: Preheat a non-stick frying pan. Add the oil or olive oil and add the chopped onion and garlic and let it brown; Add the cumin and let its aroma release, then the chopped tomato and pepper. Cover with a lid and let cook for 5 minutes over low heat; Remove the lid and break one egg at a time, placing it on top of the mixture, cover again with the lid and wait 3 minutes or until the eggs have a white film on top (but are raw inside). Add the chopped coriander and serve with fresh ground pepper;This recipe is an excellent breakfast, brunch, lunch or light dinner, and goes great with a nice mint tea!
