150g pasta (normal or wholemeal);
200g of cut mushrooms;
1 chopped onion;
3 chopped garlic cloves;
1 handful of spinach (about 50g);
5-10 fresh basil leaves;
1 handful of chopped fresh parsley;
2 tablespoons of natural yogurt;
Juice of 1/2 lemon;
Oil;
Salt and pepper to taste.
Preparation method:
Start by placing the pasta in a pan of boiling water (about 8-10 minutes). While the pasta is cooking, place the onion and garlic in a frying pan coated with olive oil;
Let it cook for 5 to 10 minutes and add the mushrooms. Let it cook for another 5 minutes. When the pasta is cooked, add it to the skillet;
Add the remaining ingredients and let it simmer for 5 minutes. Serve and enjoy.
